When I make
it to my fiftieth birthday, or better still, if I end up in a
relationship that lasts for fifty years, I may hope to receive
homemade chocolates as a gift. Daniel Stubbe, of Stubbe Chocolates,
is an expert at the charm of making chocolates. Here is his recipe
for Raspberry Truffles, perfect for a fiftieth birthday or wedding
anniversary.
Ingredients:
- 1 cup heavy
cream (35%)
- 1 cup raspberry
purée (can use any flavour you want)
- 1 tbsp.
butter
- scoop of
honey
- 2 cups
semi-sweet chocolate chips
- 1/3-2/3
cups chocolate chips
- gold flakes
(optional)
- parchment
paper
Method:
In a double boiler, melt together cream, raspberry purée,
butter and honey.
Add chocolate chips. Stir.
Remove from stove, and set aside overnight.
Once hardened, dig into chocolate with a melon ball scoop and
form truffle balls.
Roll them in your hands to perfect the shape.
Place on a tray lined with wax paper.
In double boiler, melt 1/3-2/3 cups chocolate chips.
Remove from boiler, and allow to cool.
Using two forks, dip each truffle into the bowl of melted chocolate,
then place back onto baking sheet.
Sprinkle gold flakes on top of each truffle.
Using the remaining chocolate and a parchment paper piping tool,
create decorations that say "50". Place them on wax
paper, and allow to dry.
Remove "50"'s, and gently place on top of truffle.
Present and enjoy!
