Episode 502: That's my Cookie!
Cookie Bake Off - Nik's Lime Cookies
Winner of the blue ribbon!
Well, now it's my turn to get embroiled in the cookie bake off. Here is my recipe for Lime Cookies:


  • 8 tbsps butter
  • zest of 4 limes
  • ½ cup vegetable oil
  • 1 egg
  • ¼ tsp vanilla extract
  • ½ cup confectioner's sugar, or icing sugar
  • ½ cup granulated sugar
  • 2 ¼ cups all-purpose flour
  • ¼ tsp brown ginger
  • ¼ tsp salt
  • 1 tsp baking powder
  • bowl of water
  • bowl of granulated sugar


In a large bowl, mix butter, lime zest, and vegetable oil. Blend.

Add egg, and vanilla extract. Blend again.

Add sugar and icing sugar, a bit at a time. Continue to blend.

In another bowl, add flour, ginger, salt, and baking powder. Sift it together.

Add about ¼ of the dry, flour mixture to the wet mixture. Mix. Knead into a dough.

Refrigerate for 2 hours. Remove, and roll mixture into inch-sized balls.

Place on cookie sheet.

Dip the rim of a juice glass into water, then into sugar, and press it down onto each cookie ball.

Bake at 350º until a light, golden brown.

Remove from oven, allow to cool, then serve.
