Episode 425 - Garden Party
Healthy and refreshing...
Gazpacho has always been one of my favourite recipes for a few reasons: it's quick to make, it's healthy, and it's something you can add to by using vegetables from your own garden.

  • 3 cups vegetable cocktail
  • leek, chopped
  • clove of garlic, sliced
  • green pepper, chopped
  • red pepper, chopped
  • pinch of salt
  • juice from one lemon
  • 1 English cucumber, peeled and sliced
  • white onion, chopped
  • 1 shallot, chopped
  • cup parsley, chopped
  • 1 can crushed tomatoes
  • cup vinegar
  • cup olive oil

Into blender, add leek and garlic. Blend. Add red and green peppers. Pour a bit of vegetable cocktail into blender, and blend. Transfer into pitcher. Add cucumber, onion, shallot, and a bit of vegetable cocktail. Blend. Transfer into another pitcher. Add parsley, crushed tomatoes, salt, olive oil, vinegar, and lemon juice. Blend. Combine ingredients from different pitchers, and keep transferring back and forth until it is all well blended. Chill. Serve in a beautiful service piece, such as a glass terrine.

The taste says it all. Gotta love gazpacho!
