Potato Magic
A potato like no other...
In thinking about the side dish for a B-B-Q, I figure it's time we introduce a little bit of magic. Here's something I know you'll want to try: we call it "Potato Magic"!

Ingredients:
  • medium size baking potatoes (1 per person)
  • medium size sweet potatoes (1 per person)
  • tin foil
  • shaved onion (can use sweet onion, white onion, red onion)
  • butter to taste
  • rosemary sprigs (or use your favourite herbs)
  • salt and pepper to taste
**Please note: when purchasing a potato, look for firm ones with few eyes and no green spots. With sweet potatoes, also make sure there are no cracks in the skin.

Preparation:

Begin by washing potatoes. Ensure that the eyes of the potatoes are well scrubbed of any dirt or soil. Cut one baking potato into even slices, repositioning the slices exactly the way they fell. Do the same with a sweet potato. Place on large piece of tinfoil. Take the end of the white potato and place into centre of tinfoil. Add a bit of shaved onion. Add the second piece of the sweet potato, then, another piece of onion. Then, the 3rd piece of the white potato, and so on. What we're trying to do is reconstruct one potato so that it looks like the original - but now it's striped (that's where the MAGIC part comes in!). Add butter to top of potato. Add sprig of your favorite herb, as well as pepper and salt to taste. Wrap the tin foil tightly around the potato and bake at 375 degrees for one hour.

The great thing about this recipe is that you can transport it in the tinfoil to your friend's home, throw it in the oven, bake it, and serve it immediately. Now, that is what I call magical!
