Episode 307 - Green With Envy
Pistachio Mint Torte
Even a green cake?
When thinking about the colour green, you don't necessarily have to concentrate on salads and vegetables - there are sweet alternatives. Wait until you try our green dessert : Pistachio and Mint Torte! The nice thing about this dessert is that it's not complicated and it has a nice light flavour. Sorry, one piece per customer please!

Ingredients :
  • 6 egg yolks
  • 7 egg whites
  • 1 cup granulated white sugar
  • 1 lemon (or orange) rind, grated
  • cup white bread crumbs
  • 1 cup ground pistachios
Filling :
  • 1 cups ricotta cheese
  • 1 cup granulated white sugar
  • tsp vanilla
  • 2 tbsp green Creme de Menthe (optional)
  • tsp green food colouring
  • fresh mint sprigs
**You will require a mixer and a hand blender

Method for cake :

Pre-heat oven to 350 degrees. Using a mixer, blend egg yolks and gradually add sugar. Allow to mix until creamy. Add lemon rind, bread crumbs, and pistachios. Allow to get nice and thick.

In a separate bowl, using a hand blender, whip egg whites until stiff but not dry. Fold egg whites into nut mixture. *The trick to folding egg whites is taking a little bit at a time, placing it into the batter and gently folding it in. It should be done fairly quickly because we want the air that is trapped inside to stay there. Place into two 8" ungreased spring form pans and bake for 20 minutes.

Method for filling :

While the cake is baking, combine ricotta cheese and sugar and blend well with hand blender. Add vanilla, Creme de Menthe, and food colouring. Blend.

Assembly :

Once cake has cooled, gently remove from spring form. Spread mint filling over center of 1st layer. Smooth with spatula. Take 2nd cake and place on top. Pour icing on top allowing it to spill down the sides of the cakes. Garnish with a sprig of fresh mint in the center of the top of the torte.

When you are finished, you will see that the colour is right and the taste is out of sight!
