Tagliatelle a la Carbonara
Rich and simple
Tagliatelle a la Carbonara is one of my favourite recipes and it makes a great lunch. Here is our recipe for this wonderful egg noodle pasta with a rich Carbonara sauce.

  • 1 package of Tagliatelle noodles
  • 2 tbsps butter
  • 5 oz strip bacon (*can use pancetta), chopped
  • 3 whole eggs
  • 4 egg yolks
  • cup whipping cream
  • cup grated parmesan cheese
  • handful crushed black peppercorns


Add Tagliatelle noodles to boiling water in medium-large size pot. Allow to cook for 10 minutes while preparing Carbonara sauce.

Melt butter in a skillet heated to medium-high. Chop up bacon (or pancetta) into fairly large pieces, leaving the fat on. Add bacon to skillet, and allow to cook for 5 minutes. While bacon cooks, add whole eggs and egg yolks to a bowl. Mix in whipping cream. Whisk until it becomes a bright yellow colour.

Drain but don't rinse pasta and put it back in the pot and onto the cook top. Add the now crispy bacon to it. Pour directly onto the noodles. Add egg and cream mixture. Add cheese and peppercorns. Blend well and enjoy!
