305 - Home Stretch
Turning a leftover into an entirely new meal is too cool!!! Here's a quick idea for lunch, using leftover Sloppy Joes: it's Cool Chili!
- leftover Sloppy Joes
- 1 lb ground beef or chicken
- 2 cloves crushed garlic
- 2 tbsps chili powder
- 1 can kidney beans
- 1 can chick peas (*as an option, can also use fava beans, or navy beans)
- 4 oz grated cheddar
- chopped green onion
- tortilla chips
Heat the leftover Sloppy Joes in a pot.
Sauté the beef (or chicken) over medium heat. Once cooked,
add to the leftover Sloppy Joes. Add in the garlic and chili powder.
Add in the kidney beans and chick peas. Mix together and allow
to simmer on low for approximately 15 minutes. Garnish with
cheddar cheese and green onions. Present with tortilla chips.
