On top of roasted pecan biscuits, available in specialty food shops,
my friend Lindsay Shaw places small pieces of Roquefort cheese.
You could also use Stilton or Gorgonzola.
Then, a dab of gooseberry chutney or jelly really helps to set off
the opposing flavours. It’s a surprisingly tasty combination. You
may wish to top this with parsley and a smattering of edible petals.
Treats for a tea are supposed to be small and delicate, so few ingredients
can go a long way.
