Fab Sandwiches -- Muffalata
Now dat's a sandwich!
A picnic, or Pik Nik, is the perfect excuse for preparing gigantic, delicious sandwiches. Here is a vegetarian muffalata, perfect with an assortment of side salads and dessert for a lazy day in a local meadow.


Ingredients  (Serves 6 - 8)
  • 1 large tomato encrusted Focaccia
  • 3 grilled red peppers
  • 3 grilled yellow zucchini
  • 1 grilled and sliced eggplant
  • 1 bunch, fresh spinach
  • 1 bunch, fresh basil
  • 4 small balls, Bocconcinni cheese
  • 4 oz. pesto
Slice the focaccia into two rounds. Carve out a bit of the bread from the top and bottom slices. Spread pesto onto the bottom round. Next lay the grilled red peppers onto the bread. Add the eggplant, yellow peppers, spinach, cheese and finally the basil. Sprinkle salt and pepper to taste and then place the top on the sandwich, placing four toothpicks into the top to hold it in place. Serve mustard on the side. Slice the sandwich as you would a pie.
